III Year Curriculum

The Higher Diploma program equips students with the skills needed to succeed at higher level management in the hospitality industry. The emphasis is on business, tourism development, sustainability, entrepreneurship, human resource management, financial decision making, events management and food & beverage studies. Students work individually as well as in groups in order to develop their critical thinking and managerial skills. This challenging program will prepare you well for a top quality internship either in Switzerland or abroad.

Business English. Preparation for IELTS.

Students prepare for passing IELTS exam during this course.

Hospitality Law

This course covers main aspects of legislation regulation in the Hospitality Industry. It includes general introduction in Tourism, Hotel and Restaurant legislation, as well as Labor law, rules of a contract drafting and legislative forms of Hotel/Restaurant Management. 

F&B Facilities

How to find relevant location, arrange a rent and attract funds to Hotel/Restaurant? How to successfully and cost-effectively design and technically equip a space? All of this students learn at F&B Facilities course.

Enterprise Development Project

This unit allows students to expand their knowledge of marketing, finance and human resources within a hospitality context. Students engage with a hospitality business scenario within Switzerland and develop and present a commercial proposal for the scenario to industry representatives.

Service Marketing

An introduction to basic marketing concepts with particular emphasis on the hospitality industry. A strong focus is given to consumer behaviour theory and consumer purchasing stages. 

Financial Management. Level 2.

Students will gain expertise in analysing hospitality financial results and the consequences on these results on pricing and revenue management decisions; budgeting and capital investment decisions.

HR Management

This unit examines the importance of Human Resource Management within the Hospitality Industry and assesses organisational theory, behaviour, motivation, training and performance management and their relationship to successful hospitality organisations.

Hotel Sales & Revenue Management

Students learn technics and strategies of revenue management, pricing policy, sales management.

Culinary Principles. Level 3.

Students learn different ways of cooking dairy, eggs & cheeses, traditional and current Russian and International breakfast foods, sauces, soups, meat & poultry, cold foods.
